Chocolate Chip Kale Ice Cream


Ingredients


2 cups fresh kale, washed, rinsed and torn into small pieces...any type is fine. 
2 cups raw cashews
1 1/2 cups almond milk
1/2 cup maple syrup (agave works too). I like to use "real" maple syrup. Pricey but good. 
1 tbsp vanilla extract
1 pinch sea salt
2 tbsp melted coconut oil, refined and unflavored
2-4 tbsp dark chocolate chips

 

Directions


1. Blend everything except for the chocolate chips in a high-speed blender
2. Dump everything into a freezable container (a metal loaf pan, Tupperware, etc.)

3. Stir in chocolate chips, mix well.

4. Cover it with plastic wrap or the container cover let it freeze for at least six hours or overnight. 
5. Depending on how long it's been in the freezer, you may need to let it sit out for about 5-10 minutes to thaw a bit. 

 

Tip: This is very versatile. You can add some chocolate syrup to make the entire dish more chocolatey....maybe a tablespoon or 2.  You can also add oreo cookie chunks in place of the chips.
